Our "pride of the farm" cracked Grainworks Organic Triticale is a wholesome whole grain we grow and put through the "cracker"; this breaks the kernel into smaller pieces that cook as rice or other cracked grains do. Triticale: The best of wheat and rye together in one grain Triticale is a highly nutritious whole grain hybrid of wheat and rye, combining the benefits of both and higher in protein than wheat. From rye, triticale inherited the ability to survive cold, drought, and acidic soil -- conditions that destroy wheat crops. Like wheat, triticale contains gluten, meaning it is not suitable for gluten free diets and can be used alone to make bread. Bread made from triticale are denser and heavier than wheat bread due to triticale's lower gluten content. From a home chef's view triticale can easily replace wheat, rye, or rice in many recipes. Nutritionally Triticale is similar to wheat with a nice amino acid balance, dietary fiber and vegan protein. Like other whole grains, triticale is also an excellent source of vitamins and minerals, including folic acid, calcium, phosphorus, zinc, magnesium, iron, and B vitamins. Tasty Tips and Storage Add triticale to bread and baked goods for interesting flavour and texture. Or cook up like rice for pilafs and risottos. Triticale flakes can also be substituted for part or all of the oat flakes in granolas and hot cereals. Try our granola recipe and let us know what you think! Store triticale as you would other whole grains: in a cool, dry place, and in our resealable bags or a glass container away from sunlight and moisture to keep its healthy oils from going rancid. Properly stored triticale remains fresh for about a year.
