Whole peas are husked and about 1/4 of an inch wide and pale green in colour. Split peas tend to have a mild flavour and soft texture, having more of an earthy taste than the whole dried pea. Fresh peas can cook in about 45 minutes. Older peas may take up to an hour to soften.
