Our farm grown hard red spring wheat is carefully milled in small batches to preserve nutrients and flavour. Because agricultural societies could sustain a much larger population, this led to the rise of civilization as we know it. A wheat kernel has three parts: the bran, the endosperm, and the germ. The bran yields dietary fiber and Iron. The germ contains protein; vitamin E; B vitamins, phytonutrients and omega-3 fatty acids. Hard red spring wheat has the highest protein content of any North American grown wheat. Grainworks Organic Whole Wheat Flour normally has a protein content of 12 – 15% and is ideal for whole grain bread, or multipurpose baking/kitchen use. It can be used for cookies and pastries, though it will not yield as light texture as pastry or unbleached flour. It can also be combined with our Grainworks Organic Unbleached Wheat Flour, Grainworks Organic Hard White Wheat or other flours to create your custom whole-grain blend. Store in our resealable bag or airtight container in a cool, dry place for up to a year. When stored in the freezer, whole wheat flour can last a year or more.
