ROBYN’S RED QUINOA SALAD

Robyn loves Grainworks, we love Robyn!

Once again she has filled us in on one of her awesome creations in the kitchen that we can’t wait to try.  A simple, nutiritious, and colorful quinoa salad that can be made in a hurry, with lots of room for improvisation.  Enjoy, and don’t forget to send us your favorites as well!

INGREDIENTS

1 cup red quinoa
2 cups water
1/2 cup Apple
1/2 cup red peppers
1/2 cup tomatoes
1/4 cup parsley

DIRECTIONS

Cook red quinoa and water in a sauce pan or rice cooker. Cook as you would rice, and adjust water as necessary until quinoa is tender. Once cooked set aside to cool. When I’m in a rush I put it in the freezer for 30-40 mins.

Finley chop Apple, pepper, parsley and tomatoes. Baby tomatoes work really well.

Mix with 125ml  coleslaw (or another favorite) dressing and your done. Quick easy, gluten free, dairy free salad.
