NO BAKE FLAX ENERGY BALLS

These tantalizing energy bites incorporate both whole and milled flaxseed into a delicious and nutritious on-the-go snack full of dietary fibre, beneficial oils, and fatty acids. Forget trail mix, these energy bites are perfect to bring hiking, as a quick breakfast, or as impressive potluck snack- not to mention, it’s all organic!.

The only thing better than how quick and easy these are to make is their versatility. In this recipe we added ground pralines for an extra nutty flavour and then for extra fibre rolled them in Grainworks brown flax; but be creative and use what you’ve got in your pantry. Some suggestions include: adding Grainworks organic dark chocolate chips, dried fruit, or whole nuts to the mix; or try switching up the base and use almond butter or Nutella in place of peanut butter for a sweeter desert style snack. The possibilities are endless!

Ingredients:

1 1/2 cups smooth peanut butter

* Honey is a great addition to this recipe as well for flavor and texture.  Simply reduce the amount of peanut butter as your base by the amount of honey you choose to add.

2 cups Grainworks Organic Rolled Oat Flakes (or other preffered flaked or cracked cereal grain)

3/4 gw cup organic brown flaxseed (1/2 cup reserved for rolling the bites once formed into balls)

1/3 gw cup organic milled flaxseed

1/4 gw cup organic shredded coconut

1/3 cup gw organic hemp seed

 

Directions:

  • In a large bowl mix all of the ingredients leaving out about 1/2 cup of the whole flaxseed.
  • Once combined, form with your hands into bite sized balls.

*if the mix is too dry and falling apart when forming into balls add more peanut butter (or honey), or if it is too soft and is sticking to your hands add more rolled oat flakes.

  • Lightly roll the balls in the remaining flaxseed.

No baking, freezing, or refrigerating needed for these beauties, simply serve and enjoy, or make ahead of time and keep to enjoy throughout the week!  They tend to stiffen slightly in the fridge and take on a harder texture- but they do keep outside of the fridge as well.
