New Research from U of S Disputes “Wheat Belly” Claims

It has been a while in coming, but there is now a peer -reviewed scientific study
performed by researchers at the University of Saskatchewan that evaluated the chemical composition of 37 different spring wheat varieties. Their evaluation concluded that modern wheat is essentially the
same as wheat grown in the 1800s and early 1900s. The nutritional composition of Red Fife hard red spring wheat, a variety of wheat developed through natural breeding methods in 1860, is very similar to Unity, a hard red spring wheat variety developed by natural breeding methods in the 2000s.
