Makes 4 cups
Fresh or frozen, blueberries are healthy and delicious. As luscious peaches make their last fall hurrah, enjoy them in this time saving cold breakfast for a nutritious start to the day or enjoy as a fibre-rich snack. If you have no fresh or frozen blueberries try replacing them with half the amount of raisins, chopped figs, or dates. If using dried fruit, omit the maple syrup.
2 cups Rolled oat flakes
2 cups Rice, almond, hemp, soymilk or dairy milk
1/4 cup Sunflower seeds
1/2 tsp. Ground cinnamon
Pinch Lemon zest, optional
1 tbsp. Maple syrup
1-cup Fresh blueberries
1 Peach, cubed
Put the oat flakes, milk of choice, sunflower seeds, cinnamon, lemon zest and maple syrup in a medium bowl. Cover and let sit for 30 minutes or overnight in the fridge. Stir in the blueberries and peach and serve.
Design Your Own Muesli Variations:
Flakes: Substitute Grainworks Organic spelt, barley or rye flakes – or create your own combination
Nuts: Substitute chopped raw almonds, walnuts or pumpkin seeds for the sunflower seeds
Fruits: Try replacing the blueberries with cranberries, bananas, chopped apples or dates
