Amaranth is a naturally gluten-free whole food that provides complete protein and all essential amino acids, including lysine. It's also a good source of dietary fiber, magnesium and iron. Tasty Tips and Storage Grainworks Organic Amaranth Flour can replace 25% of the flour in recipes and is considered to be one of the pantry staples of gluten free baking. Incredibly easy to use, just substitute 1/4 of the flour called for in your recipe with Grainworks Organic Amaranth Flour. Amaranth flour must be combined with another non-grain flour or starch. It has a slightly malt-like flavour and works well in baked good recipes using brown sugar or maple syrup.
